A two minute back to school peanut butter lunch snack that’s gluten-free!
In honor of back to school week and snack lunches, I bring you the easiest 3-ingredient lunch ever made for kids. This post was adapted by two cute kids, if I do say so myself. All thoughts and opinions are their own.
A recipe developed by two very young and short cooks. I promised them if they didn’t fight for a whole day they could develop their own recipe for the blog, then I would take the photos and write about it.
As long as it tasted great to mommy, even if they despised the ingredients, they could create it.
Because both desire fame, they followed through and got along for one whole day. Although in choke holds once again after the allotted 24 hours had passed, I knew I had to follow through with MY word.
This back to school peanut butter lunch snack was developed by my seven year old son and 10 year old daughter. The idea they had was to build a sandwich that wasn’t very big, yet pulled a big punch.
Something that was very important to me was the protein involved. So, they upped the game with chunky peanut butter as it’s packed with even more protein than plain.
A very important component to this sandwich is the bread. After searching, my son decided the gluten-free Kroger brand plain bread worked best here. It was squishy enough to fold. We had a winner.
One extra piece of the puzzle my miniature cooks mentioned, you can drizzle honey inside the sandwich. It adds great flavor and sweetness. And it’s healthy too!
I believe my offspring did an excellent job developing these back to school peanut butter lunch snacks. I loved this snack so much. It’s easy and can travel well. These little roll up sandwiches would be perfect for lunch boxes when school starts. And for any adult on a workday.
The kids feel very cool about accomplishing this post. As they should. I told them next, they would take the food photos and I would edit them. Yikes! But it’s a promise I made and may have to uphold and keep.

Back To School Peanut Butter Sandwich Lunch Snack
A perfect snack for a back to school lunch, that's healthy and fun.
- Natural chunky peanut butter Any brand
- 1 Banana Sliced thinly, length wise
- 2 slices gluten-free bread Preferably Kroger brand, white
- Raw honey Optional, for drizzling
KID FRIENDLY INSTRUCTIONS:
Lay two pieces of bread out on counter.
Spread a thin layer of peanut butter over each piece (not TOO thin).
Lay a few banana pieces near center of bread, on top of peanut butter.
*Optional: Drizzle a bit of honey over top.
Roll up bread tightly, starting on one side then rolling in.
Take your time rolling as peanut butter might ooze out. If it does, eat it.
Wrap sandwich with parchment paper or saran wrap or whatever you prefer, and place in fridge for about 20 minutes.
Note: You can use regular bread here as well but if using gluten-free bread, I highly recommend choosing a brand that is soft like the Kroger brand, or making your own.
